The Frye’s Favorite Squash Casserole

Eggs, Dairy Casserole 4 Servings

INGREDIENTS

1 lb Chopped yellow squash (about 4 small)
1 Onion; chopped
3 tb Butter or margerine
2 Beaten eggs
1/2 c Shredded cheddar (I use more…we like the cheesy taste)
1 ts Salt
1 c Milk
1 c Cracker crumbs (saltines)
1 ds Pepper

INSTRUCTIONS

Preheat oven to 375 degrees. Combine squash, onion, and butter in a
skillet. Saute' until squash is tender, then coarsely mash with a fork. Add
Remaining ingredients. Pour into a greased casserole dish. Bake at 375
degrees until a knife inserted near the center comes out clean. Let sit 5
minutes before serving.
