Thomas Jefferson’s Sweet Potato Biscuit

INGREDIENTS

2 1/2 c All purpose flour
1/4 c Brown sugar
1 ts Baking powder
3/4 ts Salt
3/4 ts Cinnamon
1/2 ts Ginger
1/2 ts Allspice
1/2 c Shortening
1/2 c Pecans; (roughly chopped)
3/4 c Sweet potatoes
1/2 c Milk

INSTRUCTIONS

Combine all dry ingredients in a bowl. Cut shortening into small pieces.
Combine milk and potatoes. Add to dry mixture. Add pecans and kneed until
one smooth mass of dough. Roll out to 1/2 inch thickness on a floured
surface. Cut with a 2 inch cutter. bake at 400 degrees for approximately
10-15 minutes.
