INGREDIENTS

1/4 c Packed Brown Sugar
1/4 c Margarine or Butter,Softened
1/4 c Shortening
1 Large Egg, Separated
1/2 ts Vanilla
1 c Flour *
1/4 ts Salt
3/4 c Finely Chopped Nuts
Jelly

INSTRUCTIONS

*     Use Unbleached All-purpose or whole wheat flour in these cookies.

Heat oven to 375 degrees F.  Mix Brown sugar, margarine, shortening, egg
yolks, and vanilla. Stir in flour and salt. Shape dough into 1 inch balls.
Beat egg white slightly.  Dip balls into egg white; roll in nuts. Place
about 1 inch apart on ungreased cookie sheet; press thumb deeply in center
of each.  Bake until light brown, about 10 minutes. Immediately remove from
cookie sheet; cool.  Fill thumbprints with jelly. Makes about 3 dozen.
