Tofu "Egg" Salad

INGREDIENTS

6 oz Lite firm tofu
2 tb Light mayonnaise; (or vegan mayo)
1 ts Curry powder
2 ts Nutritional yeast
3 tb Finely chopped spinach
1 ts Minced green onion
1/4 ts Freshly ground black pepper
1 ts Finely chopped fresh parsley
1/2 ts Capers; (optional)

INSTRUCTIONS

Place tofu in a small bowl and mash with a fork to create small chunks. Add
remaining ingredients and stir. Chill for 1 to 2 hours or more to allow
flavors to develop.
Serving suggestions: Toast 2 slices of multigrain bread, top with 2 ounces
of Tofu "Egg" Salad, slices of tomato, onion, lettuce, etc. OR serve on
hamburger or sandwich buns.
