Top Of The World Chicken Salad

INGREDIENTS

2 lb Boneless skinless chicken
breasts cooked
1 c Mayonnaise
2 T Peach juice
1/2 c Heavy cream, whipped
Salt
White pepper
2 c Peaches, canned drained and
Diced

INSTRUCTIONS

Cut cooked chicken breast meat into 1/2 inch cubes and set aside.
Blend mayo and peach juice in a 2 quart mixing bowl and fold in
whipped cream. Season with salt and pepper as needed. Add cubed
chicken meat and diced peaches and mix lightly, coating chicken.  Stir
gently until blended.  Refrigerate 1 hour. Can serve with lettuce
instead of bread. This recipe came from Mickey's Gourmet Cookbook and
