INSTRUCTIONS

At the end of each month, The Cook & Kitchen Staff select some of the
best recipes sent to Recipe-a-Day during the month, and post them to
the entire membership. Today's offering is from Recipe-a-Day member S.
White. Today's recipe is a great pasta salad to prepare on the weekend
and use throughout the week. S. White recommends Seven Seas Viva
Italian brand dressing, but you can prepare your own Italian Dressing
from scratch, if desired. A sprinkling of Parmesan cheese is a great
topping for the salad. Thank you to all Recipe-a-Day members who took
the time to send in a recipe this month. We're just sorry we won't
have an opportunity to publish them all! Cook the pasta as directed
on the package, and let cool. Prepare cucumber, tomato, red onion, and
green bell pepper as directed. Use in proportions according to your
taste. Combine the cooled noodles, onions, peppers, tomatoes, and
cucumber pieces together in a large mixing bowl and pour the dressing
over the top until the noodles are covered. Adjust the seasonings to
taste and serve. Refrigerate any leftovers in a covered container.
The pasta salad tastes better with time, so don't hesitate to prepare
a day in advance of serving. Kitchen Staff Tip: To prepare your own
Italian Salad Dressing, simply combine 3/4 cup red wine vinegar, 1/2
cup water, 1/2 cup olive oil and 1/4 cup of Italian seasonings
(oregano, parsley, basil, etc.) Add about 1 tablespoon freshly cracked
black pepper and pour in a shakable container to combine. Posted to
