Turkey Club On Black Bread With Brie And Watercress Mayon

INGREDIENTS

1 c Mayonnaise
1 t Dijon mustard
1 c Watercress, stems removed
2 T Fresh lemon juice
Salt and pepper, to taste
12 Black bread, 1/4 inch thick
Mesclun, or young lettuce
4 Ripe tomato
12 Roasted turkey breast
4 Brie cheese
1 Haas avocado, peeled halved
and
thinly sliced
1 c Watercress leaves

INSTRUCTIONS

How to Prepare the Mayonnaise:  Place the mayonnaise, mustard,
watercress, and lemon juice in a  blender and puree until smooth (if
too thick, add a little water).  Season with salt and pepper to taste.
How to Prepare the Turkey Club:  For each sandwich, lay three slices of
bread side by side. Spread a  layer of the mayonnaise and a small
handful of mesclun on one slice  of bread and top with a slice of
tomato. On the next slice, place the  turkey, brie, and a fourth of the
avocado slices. Stack the two  slices of bread and top with the third.
Cut the sandwich in half on  the diagonal.  © 1997 Lifetime
