Vanilla Flavoured Fromage Frais With A Compote Of Summer

INGREDIENTS

300 Fromage Frais
2 Vanilla Pods
2 Slightly Whipped Double
Cream
300 g Selection of Mixed Summer
Berries
100 g Slightly sweetened puree of
Berries
4 Sprigs Fresh Mint

INSTRUCTIONS

Place the fromage frais into a mixing bowl. Add the vanilla seeds,
double cream and icing sugar to taste. Place into small darriole
moulds (which have been lined with cling film) and refrigerate for 1
hour. Puree 100g of summer fruits with 20g icing sugar, and pass
through a fine sieve. Place the whole fruits into a bowl and add the
puree. Turn out the fromage frais into the centre of a plate. Place
the berries around and garnish with mint.  Converted by MC_Buster.
