Vegetable Rice Pancakes

INGREDIENTS

1 c Water
1/2 c Sunbrown Natural Calrose Rice
Salt; to taste
1 Zucchini; grated
1 Carrot; grated
2 tb Plain flour
1 Egg; beaten
1/4 c Vegetable oil

INSTRUCTIONS

1 . Bring water to the boil. Slowly add the Sunbrown Natural Calrose Rice
and salt to taste. Stir with a fork.
2. Cover saucepan, lower heat. Simmer for 25 to 30 minutes. Uncover, toss
with a fork. Leave to cool.
3. Grate zucchini and carrot coarsely. Stir through rice with the flour.
Mixture should be fairly dry. Add egg and mix well to combine. Mixture
should be of dropping consistency.
4. Heat oil in a frying pan. Drop 2 tablespoons of the mixture into oil and
cook until brown on the underside. Turn and cook the other side. Continue
with remaining mixture. Serve with tomato relish.
