INGREDIENTS

4 c Cooked long-grain rice
chilled
1 Cucumber, diced
1 Carrot, diced
1/2 c Frozen sweet green peas
thawed
1 Green onions, chopped
1/2 Red bell pepper, diced
1/3 c Vegetable oil
1/4 c Fresh lime juice
1/4 c Red wine vinegar
2 T Chopped fresh basil
1 T Sugar
1 T Dijon mustard
1 Garlic clove, pressed

INSTRUCTIONS

Combine first 6 ingredients.  Whisk together oil and next 6
ingredients until blended.  Pour over rice mixture; toss gently.  Chill
