INGREDIENTS

2 Courgettes
125 g Mangetouts; (4oz)
125 g Baby sweetcorn; (4oz)
4 sm Red onions
1 Red pepper; deseeded
125 g Cornflour; (4oz)
75 g Plain flour; (3oz)
4 ts Baking powder
1 tb Mustard powder
2 ts Semolina
1 ts Salt
300 Ml; (1/2-3/4 pint) iced, (300 to 450)

Oil for frying

INSTRUCTIONS

Preheat the oil for deep-frying to 190 C, 375 F.
Prepare the vegetables: Cut the courgettes into 1cm ( 1/2 inch) slices,
leave mangetout and sweetcorn whole, quarter the onions and slice the red
pepper into 2. 5cm (1 inch) slices. Leave them to drain on kitchen paper to
absorb the moisture.
To make the batter, sift the dry ingredients into a bowl, then beat in
enough water to make a thick coating batter.
Dip vegetable pieces in batter until evenly coated and deepfry in the
preheated oil for 2-3 minutes until crisp and golden brown. Serve
immediately with light soy sauce.
