Vietnamese Style Cauliflower with Straw Mushrooms

INGREDIENTS

1 c Cauliflower florets
1 Leek; white part only – (abt 6 oz)
1 tb Soy sauce
2 tb Water
1/4 ts Sugar
1 tb Olive oil
1/2 c Straw mushrooms
1 c Steamed rice

INSTRUCTIONS

Cut the cauliflower into thin lengthwise slices, slice the leeks
horizontally into thin slices. Place in separate bowls. Combine the soy
sauce, 1 tablespoon of water, and sugar in a small bowl. Heat the oil in a
frying pan over high flame. Drop the leeks in the oil and cook, stirring
for 30 seconds. Add the cauliflower. Add remaining tablespoon of water and
cover, turn heat to medium and cook for 2 minutes. Uncover and add the
straw mushrooms and sauce. Cook stirring for 2 more minutes. Serve over
steamed rice. This recipe yields 2 servings.
