Viv’s Raisin Pie

INGREDIENTS

2 c Raisins
1 1/4 c Cold water
1/2 c Orange juice
1/2 c Brown sugar
2 tb Cornstarch
1 ts Cinnamon
1 ts Orange rind
1/8 ts Salt
1/4 c Water
1 tb Vinegar
2 tb Butter
1 Pie pastry, top & bottom

INSTRUCTIONS

Boil raisin, first amount water, and juice, for 5 min in a covered pot.
Combine the following:  brown sugar, cornstarch, cinnamon, orange rind,
salt (dissolved in second amount of water). Add to cooked raisins. Bring to
boil, stirring.  Remove from heat.  Add vinegar and butter. Pour into
unbaked pie shell.  Top with other pastry. Bake in hot oven (425 F) for 25
min or until done.
