Waldorf Salad (2 Point)

INGREDIENTS

2 c Apples; chopped (2 medium)
1 1/2 ts Lemon juice
1/4 c Raisins; or snipped pitted whole dates
2 tb Grapes; seedless, green, halved
2 tb Sliced celery
1/4 c Fat-free mayonnaise; or salad dressing
1/4 c Fat-free yogurt; plain
Lettuce leaves
1 tb Pecans; or walnuts chopped

INSTRUCTIONS

Toss together chopped apple and lemon juice in a medium mixing bowl. Stir
in raisins or snipped dates, grapes and celery. For dressing, stir together
mayonnaise or salad dressing and yogurt in a small mixing bowl. Fold
dressing into apple mixture. Cover and chill for 2 to 24 hours. To serve,
arrange lettuce leaves on four salad plates. Spoon salad mixture onto
lettuce-line plates. Sprinkle with chopped nuts.
Makes 4 servings.
