Walnut Bread

INGREDIENTS

275 g Whole-wheat flour
175 g Plain flour
1 ts Bread soda
1 ts Salt
1 tb Sunflower and sesame seeds; pinhead oatmeal,
; oat flakes
25 g Unsalted butter
75 g Walnut pieces
425 ml Pint buttermilk

INSTRUCTIONS

Preheat the oven to Gas7/425F/220C.
Sieve the first four ingredients into a large bowl. Add the seeds and
flakes and combine. Rub the butter into the flour mixture until it
resembles coarse breadcrumbs.
Mix in the walnut pieces. Slowly stir in the buttermilk until the mixture
is a smooth consistency.
Butter a loaf tin. Pour the mixture into the tin and bake in the hot oven
for 10 minutes, then lower the heat to Gas5/375F/190C and bake for a
further 20 minutes or until the bread sounds hollow when tapped underneath
and is browned on top.
