Walnut Pilaf

INGREDIENTS

1 c Bulgar
Hot water
2 tb Olive oil
4 tb Toasted walnuts
1 Sweet onion
3 tb Chopped mint
1 Ripe tomato
Salt and black pepper

INSTRUCTIONS

Place bulgar in bowl with hot water covering grain. Let sit to drain,
getting out as much water as possible. Saute onion in olive oil over
medium-high until soft. Add bulgar. Saute 5 minutes. Stirring often. Stir
in toasted walnuts, fresh mint and ripe tomato. Toss together well. Season
to taste with salt and freshly ground black pepper.
Approximately 8-10 minutes.
Per serving (excluding unknown items): 267 Calories; 27g Fat (89% calories
from fat); 1g Protein; 6g Carbohydrate; 0mg Cholesterol; 12mg Sodium
