Warm Kumara Dip

INGREDIENTS

2 md Kumara
1 Onion
1 Clove garlic
1 ts Peanut oil
1 ts Prepared chilli
1 ts Ground cumin
1/4 c Stewed apple or canned apple slices

INSTRUCTIONS

Peel kumara and cook in boiling salted water for 20 minutes or until
tender.
Drain well reserving 1/4 cup of cooking water.
Peel onion and chop. Crush, peel and chop garlic. Heat oil in a frying pan
and saut. onion and garlic for 5 minutes or until clear.
Add chilli and cumin.
Place cooked kumara, reserved cooking water, onion mixture and apple in the
bowl of a food processor blender.
Process or blend adding 2 tablespoons of cooking liquid, until smooth.
Serve warm with fresh vegetables or bread.
