Warm Salad of Mustard Greens, Stilton And Pancetta

INGREDIENTS

1/4 c Fruity olive oil
1 tb Whole yellow mustard seeds
1/2 c Minced onion
2 ts Minced garlic
1/4 c White balsamic vinegar
1/2 c Peeled; diced tart sweet apple such as
Gala
Salt; to taste
Freshly-ground black pepper; to taste
1 lb Young tender mustard greens; tough stems removed
1/4 lb Pancetta; thinly sliced,
; and lightly browned
3 oz Stilton cheese; crumbled

INSTRUCTIONS

Add oil and mustard seeds to a nonstick skillet over moderate heat and cook
until mustard seeds begin to pop (cover if necessary). Add the onion and
garlic and cook until soft but not brown. Stir in the vinegar and apple and
season to taste with salt and pepper. Pour over mustard greens and toss
with pancetta and Stilton. Serve immediately. This recipe yields 4
servings.
