White Bean Bruschetta

INGREDIENTS

2 Loaves french bread; sliced on an angle
; into 1/2-inch
; slices
3 tb Olive oil
2 cn White beans; rinsed and well
; drained
1/4 c Olive oil
3 tb Balsamic vinegar
4 Cloves garlic; finely chopped
Salt and fresh pepper
1/4 c Flat-leaf parsley; coarsely chopped
2 tb Fresh oregano; finely chopped

INSTRUCTIONS

1. Preheat the oven to 350 F.
2. Brush each slice of bread on one side with olive oil.
3. Place the slices on a baking sheet and bake in the oven 10-15 minutes or
until lightly golden.
4. Combine the beans, oil, vinegar, and garlic in a large bowl, season with
salt and pepper, and add the parsley and oregano.
5. Top each slice of bread with a heaping tablespoon of the white bean
mixture and serve immediately.
*This recipe can be easily doubled or tripled for larger parties.
