Wild Rice Pilaf With Dried Fruit

INGREDIENTS

3/4 c Diced onion
1/2 c Wild rice
3 Sprigs of fresh thyme
1 t Kosher salt
1/2 t Black pepper
2 c Water
2 c Apple cider
1/4 c Dry sour cherries
1/4 c Currants, or raisins
7 mg Sodium, >1g Fat

INSTRUCTIONS

Cost: $ ; Preparation Time: 20 minutes  Difficulty Level: 3 ; Servings:
4  Combine all the ingredients, except the cherries and currants in a
medium size saucepan and cook slowly, covered, over medium heat for
about 35 minutes. Add the dried fruit and cook for another 15  minutes,
or until the rice is tender but not mushy. Cool, drain off  any excess
