Wilted Mustard Greens (Hl)

INGREDIENTS

1 bn Mustard greens; washed
2 ts Canola oil
1/2 ts Shallots; small diced
2 tb White vinegar
2 Turns freshly ground pepper

INSTRUCTIONS

In a medium-size saute pan, on medium heat or flame, put the oil in the
pan, add shallots and
saute quickly for 10 to 15 seconds. Add mustard greens and saute for 15
seconds. Swirl in the vinegar and season. Serve immediately. Total cooking
time is 2 minutes.
Yield: 2 servings
