We can do nothing, we say sometimes, we can only pray. That, we feel, is a terribly precarious second-best. So long as we can fuss and work and rush about, so long as we can lend a hand, we have some hope; but if we have to fall back upon God — ah, then things must be critical indeed!

Yogurt Dressing

Niger Dressing 6 Servings

INGREDIENTS

1 tb Dijon mustard
1 tb Pureed garlic
2 tb Fresh lemon juice
1 ts Salt
1/2 ts White pepper
1/2 c Olive oil
1 c Plain yogurt

INSTRUCTIONS

In a bowl, mix mustard, garlic, lemon juice, salt and pepper. Gradually
whisk in olive oil. Stir in yogurt. Makes 1-1/2 cups. Serve on 'Spinach
Salad' (see recipe).
