Ziti Baked with Ricotta Cheese

INGREDIENTS

1 lb Ziti pasta
12 oz Ricotta cheese
2 Eggs — beaten
3/4 c Parmesan cheese
1/2 ts Salt
1/4 ts Pepper
2 tb Parsley
3 c Marinara sauce
8 oz Mozzarella cheese — cubed

INSTRUCTIONS

Preheat to 350. Cook pasta to package. Drain and rinse under cold water
drain again. In a medium bowl,combine ricotta,eggs,1/2c of the
parmesan,salt,pepper and parsley. Mix to blend well. Toss ziti with 2 cups
of marina sauce.Place half the pasta in a baking dish. top with ricotta
mixture and half mozz. top with rest pasta,sauce, mozz and parmesan. Bake
30 -35 minutes.
