Garlicky Baked Shrimp

INGREDIENTS

Vegetable cooking spray
1 1/4 lb Medium shrimp, peeled and deveined
1/2 c Dry breadcrumbs
3 tb Finely chopped fresh parsley
1 ts Grated lemon rind
1/4 ts Salt
3 Cloves garlic, minced
2 tb Fresh lemon juice
4 ts Olive oil

INSTRUCTIONS

Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly
among dishes; set aside.
Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a bowl;
stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over
shrimp.
Place dishes on a baking sheet. Bake at 400 degrees for 13 minutes or until
shrimp are done and breadcrumbs are lightly browned. Yield: 4 servings.
Per serving: 249 Calories; 8g Fat (28% calories from fat); 31g Protein; 13g
Carbohydrate; 216mg Cholesterol; 462mg Sodium
