INGREDIENTS

4 Boneless skinless chicken breast halves
1 ts Paprika
1 ts Salt
1/4 ts Black Pepper
3/4 lb Mild Italian Sausage
16 oz Canned Tomatoes; Drain & Coarsely chopped or 20 Sundried, packed in oil, drained and chopped
2 cn Chicken Broth
1/2 ts Turmeric
1/4 ts Saffron
2 c Uncle Ben's Converted Orig. Rice
1 Onion, large; Cut into wedges
2 Cloves Garlic; Minced
1 lb Medium shrimp; peeled, dev. & cook
1 Green Pepper; Cut into strips
10 Mussels; Cleaned & Steamed

INSTRUCTIONS

Cut chicken breasts into 1/2" strips.  Combine paprika, salt and pepper in
small bowl.  Add chicken and stir until all seasoning is worked into the
meat.  Cut sausage into 1/4" pieces; remove casing.  Pat tomatoes
completely dry with paper towel (if using sundried).  Add enough water to
chicken broth to make 3-3/4 cups.  Bring to a boil in 12" skillet.  Stir in
turmeric, saffron, rice, onion, garlic, chicken, sausage and tomatoes.
Cover and simmer 20 minutes.  Remove from heat.  Stir in shrimp and green
pepper; if desired, top with mussels.  let stand covered until all liquid
is absorbed, about 5 minutes.  Makes 10 servings, 378 calories per serving,
prepared with canned tomatoes.
