We are not called to rejoice at suffering in and of itself. Suffering is bad, suffering is hard, and suffering often comes at the hands of wicked people. Therefore, we do not rejoice in suffering because we love the suffering in and of itself. We rejoice in suffering because we look forward to what God is able to do through our suffering. Paul [in Romans 5:1-5] celebrated the fact that through our sufferings and afflictions God is bringing about endurance, proven character, and hope.

Sun-Dried Tomato Cream Sauce

INGREDIENTS

OLIVIA EVANS (VPRJ01A)
3 tb Olive oil
1 c Onion — chopped
28 oz Crushed plum tomatoes in
Puree
1/2 c Sun-dried tomatoes —
Chopped
1/4 c Wine
Pepper
1/3 c Heavy cream
Parsley
Parmesean cheese

INSTRUCTIONS

Serve over tortellini or ravioli. Heat olive oil in skillet. Add onion and
saute over medium heat for 3-4 minutes. Add tomatoes in puree, sun-dried
tomatoes and wine. Bring to a boil and lower heat. Simmer for 15 minutes,
stirring occasionally. Add pepper, cream and parsley. Simmer for 3-4
minutes. (wrv)
