Everything Must Go Pasta Recipe

INGREDIENTS

3/4 c Onion; chopped
2 Cloves garlic; minced
1 tb Olive oil
1/2 c Celery; chopped
1/2 c Carrot sticks
1 1/2 c Leftover turkey; cubed (chicken,
; lean ham, pork or
; lamb may be
; substituted)
1 cn Stewed tomatoes; (14 oz.)
2 ts Oregano
2 ts Thyme
2 ts Basil
Salt & pepper; to taste
2 c Any combination leftover vegetables
8 oz Prepared shaped pasta; drained
Grated parmesan cheese; optional

INSTRUCTIONS

In a large non-stick skillet over medium heat, saute onion and garlic in
olive oil for 2 minutes. Add chopped celery, carrot sticks and saute 3
minutes more, or until crisp-tender. Add leftover turkey, stewed tomatoes,
herbs, salt, pepper, leftover vegetables and mix well.
Simmer, stirring occasionally, 8-10 minutes. Gradually add hot cooked pasta
to skillet. Spoon into serving bowls or plates and pass the cheese, if
desired.
TIP! this would also work well as a "must go" main dish soup. Just add 1,
16 oz. can or more (depending on preferred consistency) low sodium chicken
broth. Serve with crusty bread and a green salad!
