Maple-Glazed Pumpkin And Onions

INGREDIENTS

1 1/2 c Pearl onions
4 c Cubed peeled pumpkin
1 ts Olive oil
1/2 ts Dried rubbed sage
1/4 ts Salt
1/8 ts Pepper
3 tb Maple syrup

INSTRUCTIONS

Bring water to a boil in a large saucepan; add onions, and return to a
boil. Drain onions and rinse under cold water. Drain well; peel onions, and
slice in half vertically.
Preheat oven to 375°F. Combine onions and next 5 ingredients in a 2-quart
casserole. Bake at 375° for 20 minutes. Add syrup; bake an additional 30
minutes, stirring every 10 minutes.
Yield: 6 servings (serving size: 1/2 cup).
Calories 63 (11% from fat); protein 1.1g; fat 0.8g; carbohydrate 14.4g;
cholesterol 0mg; sodium 102mg.
