Nutty Couscous

INGREDIENTS

1 3/4 c Chicken broth
1 c Couscous
1/3 c Toasted walnuts; chopped
2 tb Finely diced red bell pepper
1 tb Minced Italian parsley
Pepper; to taste

INSTRUCTIONS

Bring chicken broth to a boil in a small saucepan. Add remaining
ingredients, and stir to blend. Cover and remove from heat. Let stand for 5
to 10 minutes or until all the liquid has been absorbed. Fluff with a fork
before serving. Serves 4.
Comments: A wonderful last-minute side dish, couscous requires little
attention and works well with a number of complementary ingredients such as
tomato, peppers, herbs, pesto, etc. Couscous is semolina grain that has
been rolled, dampened and coated with fine wheat flour.
