Spinach Croquettes

INGREDIENTS

4 bn Spinach leaves; chopped & cooked in
; 2 tsp butter
3 Potatoes – boiled and mashed
2 Eggs -; (beaten)
1/4 ts Nutmeg
1 tb Cornflour
1 tb Breadcrumbs
Salt & pepper to taste
Oil as required

INSTRUCTIONS

Combine the mashed potato with nutmeg, salt and pepper. Cook on a low
flame, stir in egg and mix well. Add the spinach leaves.
Shape the mixture into croquettes. Roll them in cornflour, dip in the other
egg, roll in bread crumbs and fry. Serve hot.
