John began his epistle by saying, “What was from the beginning, what we have heard, what we have seen with our eyes, what we have looked at and touched with our hands, concerning the Word of Life” (1 Jn. 1:1). There was a time when God’s people cried out for a word from their Creator (400 years of silence), now they heard from the living Word Himself in face-to-face dialogue. There was a time when no one could see the face of God without dying (Ex. 33:20), but Jesus said, “He who has seen Me has seen the Father” (Jn. 14:9). There was a time when touching the ark improperly resulted in death (2 Sa. 6:6-7), but now John reports that God was touched with his own hands.

So here’s how to avoid hypocrisy in fasting. If at any point, while fasting, you find yourself thinking, “God will love me more…God will surely be impressed with me now!” get in your car and go eat a McDonald’s Quarterpounder! If you are the least way tempted to believe, “God will bless me more…He will have no choice but to regard my righteousness!” go eat the biggest greasiest pizza you can find! If it crosses your mind, “I’m better than others who don’t fast, and I sure hope they recognize it as clearly as I do!” go to an all-you-can-eat smorgasbord!

Turn of the Century Minted Devil’s Food Layer Cake

3/4 c Water
3/4 c Unsweetened cocoa powder
1/2 c Buttermilk
1/2 ts Peppermint extract
2 1/2 c Sifted cake flour
1 ts Baking soda
3/4 c Unsalted butter; room temperature (1
; 1/2 sticks)
2 c Firmly packed brown sugar
3 lg Eggs
34 Semisweet chocolate chips
3 c Whipping cream
1/2 c Dark corn syrup
1 1/2 lb Semisweet chocolate; chopped
1/2 ts Peppermint extract
Fresh mint leaves

INSTRUCTIONS

CAKE
FROSTING
For Cake: Preheat oven to 350 F. Butter two 9-inch square cake pans with
2-inch-high sides. Line bottoms with waxed paper. Butter and flour waxed
paper. Bring 3/4 cup water to simmer in saucepan. Place cocoa in small
bowl. Gradually whisk in hot water. Whisk in buttermilk and extract. Mix
flour and baking soda in medium bowl. Using electric mixer, beat butter in
large bowl until fluffy. Gradually add sugar, beating until light. Add eggs
1 at a time, beating well after each addition. Add dry ingredients
alternately with cocoa-buttermilk mixture in 2 batches each, beating just
until combined.
Divide batter between prepared cake pans. Sprinkle with chocolate chips.
Bake until tester inserted into center of each cake comes out with some
moist crumbs attached, about 20 minutes. Cool cakes in pans on racks 15
minutes. Run small sharp knife around pan sides to loosen cakes. Turn out
cakes onto foil-lined racks. Carefully peel paper from cakes and cool
completely. (Can be prepared 1 day ahead. Cover tightly and refrigerate.)
For Frosting: Bring whipping cream and corn syrup to simmer in heavy large
saucepan. Reduce heat to low. Add chocolate; whisk until smooth and melted.
Stir in peppermint extract. Refrigerate until mixture just thickens to
spreading consistency, stirring frequently, about 2 hours.
Place 1 cake layer on platter. Spread 2 cups frosting over. Top with second
cake layer. Using icing spatula, spread remaining frosting in thick
decorative swirls over top and sides of cake. (Can be prepared 8 hours
ahead; cover with cake dome and let stand at room temperature.) Garnish
cake with mint leaves.
Serves 8.
