INGREDIENTS

2 Sticks unsalted butter; softened
1/2 c Sugar
1 pn Salt
1 Egg yolk
1 ts Vanilla extract
2 c All-purpose flour

INSTRUCTIONS

With an electric mixer beat together butter, sugar and salt until very
light, about 5 minutes on medium speed. Beat in yolk and vanilla. Remove
from mixer, sift in flour and stir to blend. Divide dough in half and shape
into two 8-inch long cylinders, forming them in sheets of parchment paper.
Chill until firm.
Preheat oven to 325 degrees F. Slice cylinders of dough 1/4-inch thick and
arrange on parchment paper-lined baking sheets. Bake 15 to 20 minutes.

Variation: Add 1 1/2 cups chopped slivered nuts to dough before shaping
logs.
