Brandied Fruit Souffle

INGREDIENTS

1 1/2 c Dried figs or dates,chopped
2 tb Brandy
3/4 c Unsweetened apple sauce
3 tb Sugar
4 Egg whites

INSTRUCTIONS

Soak the figs or dates in the brandy for 2 hours.  Mix in the apple
sauce and sugar and stir until the sugar dissolves.  Preheat the oven
to 350°F. Lightly grease a 7 inch straight-sided soufflé dish, and
dust lightly with a little sugar.  Beat the egg whites until stiff,
but not dry, and fold into the fruit mixture.  Place the soufflé dish
in a pan with enough hot water to come halfway up the sides.  Bake
for 20 to 25 minutes, or until well risen and firm.  Serve
