Apple Lokshen (Noodle) Kugel (Sweet)

INGREDIENTS

8 oz Medium Egg Noodles
1/4 c Melted Margarine or oil
4 Eggs, beaten
3 md Apples
1/4 c Dark Seedless Raisins
1/4 c Sugar
1 1/2 ts Salt
2 ts Cinnamon
1/2 ts Vanilla

INSTRUCTIONS

Cook and drain noodles and put in a large bowl. Stir in margarine and eggs.
Peel and chop apples. If using raisins, rinse in hot water and drain.
Combine all ingredients together, add seasoning and mix well. Preheat oven
to 350 deg F. Pour kugel mixture into a greased 9" x 13" baking pan. Bake
for 40-60 minutes or until lightly browned. Makes 12 servings. Note: for
extra softness, add another 2 eggs.
Variation:  Pineapple Kugel Replace apples and raisins with one 16 oz can
crushed pineapple..Add an additional 1/2-3/4 cup of sugar and 1 tbs
cinnamon.
