Braised Short Ribs of Beef W/black Beans

INGREDIENTS

1 tb Fermented black beans
1 1/2 lb Beef short ribs
1/2 ts Salt
1 Clove garlic
1 tb Soy sauce
1 tb Sherry
1 Or
2 tb Oil
1 c Water

INSTRUCTIONS

1. Soak fermented black beans.
2. With a cleaver, chop ribs in 1- by 2-inch sections. Sprinkle with salt.
Let stand 30 minutes.
3. Mince garlic and mash with soaked black beans. Stir in soy sauce and
sherry.
4. Heat oil. Brown rib sections lightly. Add black bean mixture and
stir-fry 2 minutes more.
5. Add water and bring quickly to a boil. Then simmer, covered, until done
(about 45 minutes).
