David’s Besan-stuffed Chiles

INGREDIENTS

Besan
Onion, chopped
Salt
Cumin
Green chiles, e.g. large
cayennes fresno
jalapeno
large serranos
Ghii/oil
Black mustard seeds
Yoghurt

INSTRUCTIONS

(Bhopal, 1970)  Stuff spice/besan mix into green chiles (seeds and
membranes removed,  per taste preference, but also to make some room
there). Fry chiles  in ghii. Add black mustard seeds (they should pop a
bit). Add yoghurt  and cook slowly until done.  Posted to CHILE-HEADS
