Double Cheese Artichokes

INGREDIENTS

2 14 oz. cans artichoke hearts drained
1 c Ricotta cheese
1/2 c Parmesan cheese
1/2 Red pepper,seeded and finely chopped
2 ts Parsley, chopped
Black pepper, coarsely ground

INSTRUCTIONS

Cut thin slices off the bottoms of the artichoke hearts so they sit
upright.  Combine the remaining ingredients.  Spread the leaves apart
slightly and fill with the cheese mixture.  Broil for 1 minute or until
cheese melts and bubbles.  Serve warm. Serves 6-8 Typed in MMFormat by
