INGREDIENTS

2 c Pancake mix
1 pt Shucked oysters, drained
Corn oil
Salt
COCKTAIL or TARTAR SAUCE

INSTRUCTIONS

Put dry pancake mix into large shallow mixing bowl; add oysters, a
few at a time, tossing lightly with both hands until well coated.
Shake off excess breading in wire basket; deep fry, a few at a time,
in fat heated to 375 for 1 1/2 -2 minutes, or until golden brown.
Drain on paper towels. Repeat until all oysters are cooked. Salt
slightly & serve with Cocktail or Tartar Sauce as first course or as
main coarse. NOTE: Equal results may be obtained by frying oysters in
1" hot oil in large frying pan. Keep turning until browned on all
sides. French fried oysters are the basis for the New Orleans'
culinary favorite "po'r boys," made with loaf of Italian or French
bread. Heat bread & slice in half lengthwise. Remove excess bread
from both halves, creating two "boat" shapes. Fill each boat with
layers of French fried oysters, thinly sliced tomatoes, sliced dill
pickles, lettuce & mayonnaise. Put boats together.
