French Onion Soup With Miso

INGREDIENTS

1 T Vegetable oil
4 Yellow onions, thinly sliced
3 T Dark miso
2 c Water
4 French bread
1 T Dijon-style mustard
1 c Shredded reduced-fat Swiss
cheese. or soy
equivalent

INSTRUCTIONS

Heat a large heavy pot over medium heat. Add oil and onions and toss
to combine. Cook over very low heat for 1-1/2 to 2 hours, stirring
every 15 to 20 minutes. 2. Dissolve mis0 in 1/2 cup water and add to
pot along with remaining water Bring to a boil, stir well, and remove
from heat. Preheat broiler. Divide hot soup between 4 individual
oven-proof bowls. Spread bread slices with mustard and place
mustard-side down on top of soup. Sprinkle equal amounts of cheese
