Fresh Mushroom Sauce

INGREDIENTS

500 g Fresh mushrooms; Porcini, Swiss
; Brown, and others.
2 ts Minced garlic
1 Brown onion; chopped finely
2 tb Olive oil
1 tb Lemon juice
Salt and freshly ground black pepper
1/2 c Heavy cream; (optional)
1/2 c Finely chopped Italian parsley
300 g Dried pasta or 600g. fresh pasta of your; cooked 'al dente'

INSTRUCTIONS

Heat the oil and add the finely chopped onion and garlic and cook until the
onion is golden brown. Add the sliced mushrooms and cook over a low flame
for 5 - 10 minutes, depending on the size of the mushroom pieces. Add the
lemon juice and season to taste. Cook a further two minutes. Just before
serving, add the cream and reheat gently without boiling. Mix through hot
pasta and serve with plenty of parsley sprinkled on the top.
