INGREDIENTS

2 c Rolled oats
1/2 c Steel-cut oats
1 1/2 c Wheat or rye flakes
1/2 c Rye flour or whole wheat flour
1/4 c Powdered nonfat milk
1/2 c Millet
2 tb Cinnamon
1 ts Nutmeg
2 tb Apple juice concentrate
2 ts Vanilla
1 Split vanilla bean

1. Place oats and wheat or rye flakes in a colander. Pour cold water over
them just to dampen, then drain. Place in a bowl.
2. Add rye or whole-wheat flour, powdered milk, and millet. Mix gently with
a fork and place on a nonstick baking sheet.
3. Sprinkle with half of cinnamon and nutmeg and with the combined apple
juice concentrate and vanilla.
4. Toast in a 375-degree oven for 15 minutes. Add the remaining cinnamon
and nutmeg. Mix lightly and toast for another 15 minutes. Repeat until the
granola is golden brown - about 45 minutes total.
5. Cool and store in a tightly sealed jar to which you have added a split
vanilla bean.
