Green Beans with Red Potatoes

INGREDIENTS

1/4 c Butter
6 Tiny new potatoes (unpeeled) halved
1/4 lb Black Forest ham, slivered
1/4 c Minced shallots
Salt and pepper
1 lb Green beans

INSTRUCTIONS

In saucepan, melt butter over medium heat; cook potatoes, ham and shallots
for 5 minutes or until shallots are softened but not browned. Season with
salt and pepper to taste.  Reduce heat to very low; cook, covered, for 5
minutes, adding 1 to 2 tbsp. water if mixture seems dry.
Trim beans; cut into 1 inch pieces.  Stir into potato mixture, covered and
stirring occasionally, for about 10 minutes or until beans are tender-crisp
and potatoes are tender, adding up to 2 tbsp. more water if too dry. Taste
and adjust seasoning if necessary. Makes about 4 servings. Typed in
