Green Rice Casserole

Dairy, Eggs Swiss Casseroles, Cheese 6 Servings

INGREDIENTS

1 bn Scallions — chopped
1 Clove garlic
1 tb Oil
2 1/2 c Brown rice — cooked
1/3 c Fresh parsley — chopped
1/2 c Swiss cheese — grated
2 Eggs — beaten
2 c Milk
1 ts Salt
1/2 ts Dill weed

INSTRUCTIONS

Preheat oven to 350.  Chop scallions and saute with garlic in oil until
soft; crush the garlic with a fork.  Combine with remaining ingredients in
a greased 2 quart casserole. (Be sure to reduce the amount of salt if you
use rice that is already salted) Bake about 45 minutes.
