Green Vegetable Stir-fry

INGREDIENTS

1 T Oil
1 Onion, sliced
1 T John West Ginger Garlic &
Shallots Stir-Fry Mix
2 t John West Green Curry Paste
6 c Assorted sliced green
vegetables
For example broccoli
snowpeas
Beans, spinach
1 T Thai fish sauce
2 t John West Coriander
2 T Finely shredded kaffir lime
leaves optional

INSTRUCTIONS

Heat oil in a wok or large frying pan over a medium heat. Add onion,
stir-fry mix and curry paste and fry for 2 to 3 minutes. Add green
vegetables and toss over the heat for 2 to 3 minutes, until bright
green. Add fish sauce and coriander, mix well and toss over the heat
for I to 2 minutes. Serve with rice, stir-fries, or simple meat
