Grilled Aubergine And Goats Cheese Parcels

INGREDIENTS

1 250 gram pac baby aubergines; cut into 5mm (1/4
; inch) slices,
; lengthways
4 tb Olive oil; (4 to 6)
250 g Hard goat's cheese; cut into 2cm (1
; inch) oblongs (8oz)
Grated zest and juice of 1 lemon
1 20 grams pac fresh flat leaf parsley; finely chopped
1 15 grams pac fresh basil leaves; torn into pieces
Salt and freshly ground black pepper

INSTRUCTIONS

Preheat the grill to a moderate heat.
Place aubergine slices on a grill pan and lightly brush with 1-2
tablespoons of the oil. Cook for 2-3 minutes on each side or until golden
brown and soft. Allow to cool.
In a bowl, combine the cubed cheese with the lemon zest and juice and some
of the flat leaf parsley and basil.
Place a piece of cheese onto an aubergine slice. Roll up and secure with a
cocktail stick. Repeat this process until all the ingredients are used.
Place rolls into a serving bowl, drizzle over the remaining oil and
sprinkle with remaining herbs and season.
