Grilled Catfish Burrito

INGREDIENTS

Catfish filets
Allegro's marinade
Rice; cooked
Black beans; cooked with onion and garlic
Flour tortillas
Red pepper; finely diced
Scallions; finely diced
Parmesan or romano cheese; freshly grated

INSTRUCTIONS

This recipe was in the Oxford Town last Thursday. It looks like it might be
yummy, so I wanted to share it with you.

Marinade catfish filets and grill until done. Mix some rice and beans
together and spread as a base on tortilla. Layer the burrito with catfish,
then pepper and scallions, followed with a generous dusting of cheese. Wrap
the tortilla, then place in a warm, lightly greased skillet over low heat
and cover for 5 to 10 minutes.
