Honey Mustard-glazed Carrots

INGREDIENTS

1 lb Carrots
1 T Oil
1/2 oz Butter
1/2 T Brown sugar
1 T Honey
1/2 T Lemon juice
1 t Dijon mustard
Freshly ground pepper
2 T Raisins

INSTRUCTIONS

Peel carrots and cut into 1-in/2.5cm bits. Boil until just tender;
drain.  Mix together honey, lemon juice and mustard. Heat oil and
butter in  heavy frying pan.  Fry carrot, stirring, for 3 minutes. Add
in sugar, black pepper,  raisins. Cook, stirring for 2 mins. Stir in
honey mixture. Cook,  stirring, until carrots are glazed - around 2
