Lemon Chess Pie

Eggs Lemon, Mother’s re, Pies 1 Servings

INGREDIENTS

1/4 c Margarine (1/2 stick); melted and cooled
1 1/4 c Sugar
3 Eggs
2 Lemons; juice only
1 9 inch pie shell; unbaked

INSTRUCTIONS

Combine sugar, eggs and cool margarine. Beat just until mixed. Add lemon
juice while beating. Mix well. Bake in pie shell at 400 degrees on bottom
rack of oven for about 20 minutes until filling is firm.
NOTES :    Mother always said to use margarine, not butter. This is my
favorite pie.
