Low-Fat Baked Macaroni And Cheese

INGREDIENTS

8 oz Fat-free cottage cheese
12 oz Fat-free sour cream
1/2 c Chopped green onion
2 c Fat-free cheese; grated
1/2 c Evaporated skim milk
2 Egg Beaters
4 c Cooked elbow macaroni Paprika
Salt & pepper to taste
1/4 c Bread crumbs
Non-Fat cooking spray

INSTRUCTIONS

Preheat oven to 350°. Spray a casserole dish with cooking spray & set
aside. In a blender, mix together, cream cheese & cottage cheese until
smooth. Combine blended mixture with cooked macaroni, cheese, milk, chopped
onion, and Egg Beaters. Mix well & add salt & pepper to taste. Pour into
prepared casserole dish & sprinkle with bread crumbs & paprika.. Spray top
with cooking spray. Bake covered for 35 minutes, uncover and bake 5 minutes
more.
