Low-Fat Alfredo Sauce

INGREDIENTS

1 cn (15-oz) of canelli beans (white) rinsed and drained
2/3 c Milk
1/4 c Grated cheese (parmesan or romano)
2 c Your favorite thinly sliced vegetables
1 tb Chopped fresh oregano, -or-
1 ts Dried oregano
1/4 ts Salt
1/8 ts Nutmeg (careful!, this can overwhelm the overall flavor)
1/8 ts Pepper (more or less depending on what you like)
Garlic and/or lemon (optional, depending on what you like)

INSTRUCTIONS

Here's a nifty recipe for those who desire an alfredo sauce, but can't
handle the butter and cheese overdose. you can of course alter this recipe
to add or remove what you like or do not like.
process beans with milk until smooth (blender or food processor). transfer
bean/milk mixture to warm skillet. stir in remaining ingredients, add
vegetables, simmer until vegetables are tender. 10-15mins approx.
pour over your favorite pasta or ravioli.
